Key Lime Pie… the dessert I think of in the summertime, at the beach, or on an island. It also happens to be my dad’s favorite dessert, so I made it for him for Father’s Day! I have to say, it’s probably the best Key Lime Pie I’ve ever eaten and it was SO EASY! All you have to do is combine the ingredients, mix, and you have the best pies! You can go an extra step further and make a homemade whipped cream! I’m sharing both the pie and whipped cream recipes below!
Key Lime Pie & Whipped Topping Ingredients
- Key Lime Juice (at least one cup) – I used Nellie & Joe’s Key Lime Juice
- Two cans (14 oz) of Sweetened Condensed Milk
- One block of Cream Cheese
- 5 Egg Yolks
- Graham Cracker Pie Shells – I used the Keebler premade pie shells
- Fresh Key Limes (for zest and juice)
- Whipping Cream
- Powdered Sugar
Now Let’s Make the Pie Filling
Step one: Preheat the oven 350 degrees
Step Two: Pour one cup Key Lime Juice, 5 Egg Yolks, Two Cans of Condensed Milk and Cream Cheese into mixing bowl. Use a mixer to mix together. I used a hand mixer!
Step Three: Add some Key Lime Zest from fresh Key Limes (I’ve read you can sub in normal limes if you can’t find Key Limes), and stir in. You can also add a dash more key lime juice if you’d like.
Step Four: Pour into key lime filling into graham cracker pie shells
Step Five: Bake for about 20 minutes at 350 degrees until the top of the pie is congealed. The pie will still remain jiggly.
Step Six: Remove from oven and place on cooling racks to cool completely, and refrigerate for three-four hours for best results. We ate them after only refrigerating for about one hour, and they are still good, but for best results refrigerate for longer!
Finally, the Whipped Topping
Step One: Add whipping cream to mixing bowl along with powdered sugar. I don’t measure powder sugar but start with a little and add as needed.
Step Two (Optional): Add Key Lime Zest, and juice from one Key Lime.
Step Three: With a mixer (a hand mixer is best and easiest) start mixing the ingredients until you have a fluffy, thicker whipped cream. Add powder sugar as necessary for thickness.
Step Four: Add homemade whipped cream to pie or prior to serving!
*Special tip – add whipped topping to a ziplock bag, cut a hole on one of the corners and squeeze it out of the corner to decorate!
